International Insect Eaters

    Most students get a kick out of that when I tell them.  So, I remind them that most foods in Kenya  and  Ecuador (like corn, bananas, potatoes, peanuts, chicken and fish, just to name an armful) are foods that we eat often in the United States.  But, think twice!  There are plenty of insect-eaters in the United States, too.  No, I'm not talking about birds, spiders, lizards, and bats; I'm talking about people.  The University of Wisconsin publishes a newsletter called The Food Insects Newsletter; it is chock full of wonderful recipes and dishes - all featuring insects as the main ingredient. MMMM!  I'm getting hungry just thinking about it.  How about you?
